🍵What is Matcha?
Matcha is a Japanese finely ground green tea powder. I'll be honest, it's expensive! However, when it comes to baking, don't get too caught up in quality. I use the cheapest culinary grade matcha that I can get my hands on. Feel free to add more or less depending on your preference. There are different types of matcha:
1. Ceremonial-Grade Matcha
Purpose: Best for traditional tea preparation and drinking on its own.
Flavor: Smooth, umami-rich, with minimal bitterness.
Color: Vibrant, bright green.
Texture: Silky and fine, dissolves well in water.
Uses: Drinking as a hot or iced tea, whisked with water.
Features: Made from the youngest, tenderest tea leaves, often handpicked and stone-ground.
2. Culinary-Grade Matcha
Purpose: Designed for cooking and baking.
Flavor: Stronger and slightly more astringent than ceremonial-grade.
Color: Slightly darker green with less vibrancy.
Texture: Fine but less delicate than ceremonial-grade.
Uses: Incorporating into lattes, smoothies, desserts (like your matcha cheesecake tart), and savory dishes.
Features: A more affordable option made from slightly older tea leaves.
3. Premium-Grade Matcha
Purpose: A versatile middle ground between ceremonial and culinary-grade matcha.
Uses: Drinking (especially in lattes) or high-quality recipes that highlight matcha.
Flavor: Balanced with a hint of sweetness and some bitterness.
Color: Bright green, though not as vivid as ceremonial-grade.
Texture: Fine, dissolves well, suitable for both drinking and cooking.

Ingredients
Here’s what you’ll need to bring these Miffy matcha donuts to life:
- Flour : just regular all-purpose flour!
- Sugar : white granulated sugar
- Baking powder : gives rise to the donuts for a fluffy texture. Not to be mistaken with baking soda.
- Salt : balances and intensifies flavor
- Matcha powder : Japanese green tea powder. Do not use matcha latte powder.
- Egg yolk : brings richness and structure.
- Milk : room temperature whole milk. Can use plant-based if preferred.
- Butter : unsalted butter. Microwave in 5s bursts to melt.
- Whole almonds : these are for the ears
- White candy melts : I like to use candy melts for a very white finish but white chocolate works too!
- Coconut oil : just a little bit helps to thin out the chocolate and make dipping easier.
- Black candy melts : can use dark chocolate too. Just for the details of Miffy's face.

Instructions
1. Preheat oven to 175°C (350°F). Lightly grease a donut pan.
2. Mix wet ingredients: In a small bowl, whisk together egg yolk, milk, and melted butter.
3. Mix dry ingredients: In a large bowl, whisk flour, sugar, baking powder, salt, and matcha powder.
4. Combine wet and dry ingredients until smooth. Small lumps are fine.

5. Bake: Fill each donut cavity a little over halfway and bake 15–18 minutes, or until a toothpick comes out clean. Let cool completely.

6. Prepare coating: Microwave white candy melts with coconut oil in short bursts until melted.
7. Make ears: With a small knife, cut two slits at the top of each donut. Dip almonds in melted coating and insert into the slits. Let set.




8. Dip donuts: Carefully dip donuts ¾ into melted candy coating. Double dip if needed for an opaque finish. Allow to harden.


9. Add details: Use melted dark chocolate and a toothpick to draw Miffy’s face.


Tips for Perfect Miffy Donuts
- Coconut oil: to thin our your chocolate when dipping. Use it sparingly though!
- Precise Decorations: For Miffy’s face, a fine-tipped piping bag or a toothpick can help you achieve neat details.
- Be patient: once the almonds are set into the donuts with chocolate, wait for the chocolate to set before dipping the whole donut. Otherwise, you risk the almonds falling out.

Miffy Matcha Donuts

These Miffy Matcha Donuts are soft, fluffy baked donuts infused with earthy matcha and decorated to look like the beloved Dutch rabbit, Miffy.
Ingredients
- 120g all-purpose flour
- 100g sugar
- 1 teaspoon (~4 g) baking powder
- Pinch of salt
- 6g matcha
- 1 egg yolk
- 150g milk (~150 ml), room temp
- 14g melted butter (~1 tbsp)
- 24 whole almonds
- 175g white candy melts or white chocolate (1 cup)
- 1 tablespoon coconut oil
- black candy melts or dark chocolate for details
Instructions
- Preheat oven to 175C/350F. In a small bowl mix egg yolk, milk, and melted butter.
- In a large bowl whisk together flour, sugar, baking powder, salt, and matcha powder. Add in the liquid ingredients and mix until smooth. Some small lumps are fine.
- Lightly grease a donut pan and fill with the batter until a little over half full. Bake for 15-18 minutes or until a toothpick test comes out clean. Allow to fully cool.
- In a small bowl, microwave white candy melts with coconut oil for 8 second bursts until full melted. With a knife, make incisions on the front of the donuts for the ears. Dip two almonds in the candy melts and insert into the incision. Allow the almonds to set into place before moving forward.
- Remelt the candy melts if needed. Carefully dip the donuts about ¾ into the candy melts. Double dip for a more opaque look. Finally once set, use melted dark chocolate and a toothpick to make the miffy details.
