What is a Fruit Fool Dessert?
A fruit fool is a classic British dessert made by folding sweetened fruit purée into whipped cream. The result? A light, airy, and velvety dessert that’s bursting with fruity goodness. Traditionally, fools are made with berries like strawberries or raspberries, but we’re switching things up with fresh, tangy kiwis! I like to serve mine with crunchy shortbread cookies for the added texture.

We’re keeping it simple with just three main ingredients: kiwis, heavy whipping cream, and sugar. And before you say, "Hey, that’s four!"—sugar doesn’t count because it’s a pantry staple in most kitchens. If you want to take it up a notch, you can add vanilla bean paste, but it’s totally optional!
- Kiwis, finely diced
- Sugar
- Heavy whipping cream
- Optional vanilla bean paste
Garnishes (optional but highly recommended!):
- More diced kiwi
- Crushed shortbread cookies
- Fresh mint

Step 1:
Prepare the Kiwi: In a large bowl, mix the diced kiwis with sugar. Let it sit for about 10 minutes to draw out the juices. Then, roughly mash with a fork or potato masher. You want some texture, so don’t puree it completely!

Step 2:
Whip the Cream: In another large bowl, beat the heavy cream (and vanilla paste if using) until stiff peaks form. Be careful not to overmix—it should be fluffy, not buttery.

Step 3:
Fold & Layer: Gently fold half of the kiwi mixture into the whipped cream. In dessert glasses, alternate layers of cream and kiwi mixture for a beautiful presentation.

Step 4:
Garnish & Serve: Top with more kiwi, crushed shortbread cookies, and a sprig of fresh mint. Serve immediately and enjoy!
Hint: If your kiwis are not super ripe, add more sugar to help with sweetness.

- In a large bowl mix together diced kiwis and sugar. Allow the sugars to draw out some of the juices, around 10 minutes. Roughly mash with a masher or fork.
- In a separate large bowl, beat the cream and vanilla paste until stiff. Do not over mix! Gently fold in half the kiwi mixture.
- In a dessert glass, alternate layers of cream and kiwi. Top with more fruit, crushed shortbread cookies, and garnish with fresh mint.
